Raw Vegan Matcha Coconut Cream Pie

For the crust, here’s my super easy Raw Vegan Pie Crust (No Bake) recipe:
For the Filling and Topping:
- 4 cups of fresh young coconut meat. You can usually find this in the frozen fruits/smoothie section at your local grocers. Pro tip: Whole Foods is almost guaranteed to have it 9 times out of 10. I know because I like to keep it on hand as a yogurt topping.
- 1/2 cup of coconut water
- 1/4 cup of raw coconut nectar or other sweeteners that are in liquid form. Set aside 2 tbsps.
- 1/4 tsp of pink salt or sea salt
- 1/2 tbsp of pure vanilla extract or vanilla bean seeds
- 2/3 cup of raw coconut butter (warmed to liquid). Set aside 2 tbsps. If you want to keep it “raw” you can warm up the jar it comes in by placing it in a pot, cover it with water, and warm it up on low. The temp is low enough that it won’t destroy any of the nutritiousness inside.
